Clementine, Herb & Garlic Roasted Potatoes

Inspired by Jamie Oliver; passionate about food, and roast potatoes. 😉 Here are simple tips to make roast potatoes that cause guests to pause and make surprised ‘mm-mmm’ sounds.

Ingredients:

This is what we used, but it is super easy to adjust amounts, and to use different herbs and aromatics.

  • Potatoes – 700g medium-sized Nicola potatoes
  • Olive oil – enough to coat the potatoes
  • Herbs – 3 sprigs of oreganum
  • Aromatics – peel of one clementine in pieces
  • Salt – our favourite part! 😉

Directions:

  1. Peel the potatoes until the edges go fluffy – almost too far!
  2. Strain in a colander and toss to further soften the edges and cause just a few to break.
  3. In a baking dish, place olive oil, herbs and aromatics. Add potatoes and a generous grinding of salt* and then use a large spatula to turn them in the herbs and oil until they’re coated, adding more salt as you go.
  4. Roast for 50 – 60 minutes on 180 C (350 F) until the edges are beautifully browned, checking on them after about 40 minutes.
  5. Serve and surreptitiously watch your guests faces.

*TIP: swap the salt for our Chilli Salt for an extra flavour punch.
