Salted Caramel Iced Coffee

To make the caramel:

INGREDIENTS:

  • ¼ heaped cup butter
  • 1/3 cup honey
  • ½ cup coconut cream (or cream if not dairy-free)
  • 1 tsp salt
  • ½ tsp vanilla paste or 1 tsp vanilla essence (optional)

DIRECTIONS:

  1. In a small saucepan on a low heat, melt butter and honey together.
  2. While stirring with a whisk, slowly add the coconut cream, and keep stirring until fully encorporated.
  3. Add salt and vanilla, and stir in.
  4. Simmer on low heat until thickened, +/- 5-8 minutes. (A high heat will likely split the mixture.)
  5. Pour into a glass jar and allow to cool.

To make the coffee:

Spoon caramel around the inside of the glass just below the rim.

Add ice. Pour your coffee over with your choice of milk (or have black), and enjoy your summer treat.
