Quick-Pickled Red Onions

With their wonderful sweet-sour crunch, and their attractive minutes-to-make status, it’s understandable that quick-pickled red onions are all over the net. (When you look.)

Despite their simplicity, it’s still always impressive to say, ‘I made these myself’, especially after people taste them. 😉 And they can brighten any dish with their gorgeous colour!

INGREDIENTS (feel free to halve):

  • 2-3 red onions (medium in size)
  • 2 cups apple cider vinegar
  • 1 cup water
  • 4 tsp honey
  • 4 tsp Oryx salt – or chilli salt for a small kick!

Optional: herbs or additional spices

DIRECTIONS:

  1. Chop onions: the shape is your choice. Rounds, half-slices, or diced – and place in a jar. Fill up to the shoulder of the jar, or near the top.
  2. In a small saucepan, warm up the apple cider vinegar and water, and dissolve the honey and salt in it.
  3. Pour over the onions, allow to cool a little, and enjoy right away. The warmth softens the onions a little while preserving a nice crunch.
  4. Once completely cooled, seal jar and keep refrigerated. Enjoy ad hoc, straight from the jar if you like!
