Cured salmon by Zola Luwarca

Ingredients

Salmon steak

30g Oryx Coarse Salt

30g sugar,granulated white

passion fruit

Dill

Lime

Red chillies

Orange

Method

In a bowl pour sugar and oryx salt,this is a preserving method

cover the salmon for about an hour and let it rest in a fridge

Take it out and run it under water to get rid of the sugar and salt

Dry any excess water and cut it as desired

Serve

Hints on using oryx salt:

It has a better taste than any other salts

When using it for curing it makes the item hold better, it also adds the glossiness.
